Ingredients:

2 cups baby spinach

½ cup pumpkin seeds

3 tablespoons goji berries

½ cup cherry tomatoes

½ cucumber, chopped

¼ cup red onion, thinly sliced
Method:

Chop all of your vegetables & mix into a large bowl.

Add pumpkin seeds & goji berries.

Top with your favourite home-made salad dressing.

Add your favourite protein to the salad if desired.
