Spinach Salad with Pumpkin Seeds

Ingredients:

  • 2 cups baby spinach

  • ½ cup pumpkin seeds

  • 3 tablespoons goji berries

  • ½ cup cherry tomatoes

  • ½ cucumber, chopped

  • ¼ cup red onion, thinly sliced

Method:

  1. Chop all of your vegetables & mix into a large bowl.

  2. Add pumpkin seeds & goji berries.

  3. Top with your favourite home-made salad dressing.

  4. Add your favourite protein to the salad if desired.
