Paleo Meatballs

Ingredients:

  • ¾ cup parsley, coarsely chopped

  • 3 medium cloves garlic

  • ¼ cup almond meal

  • 1 egg

  • 450g chicken, turkey, or beef mince

  • 1 teaspoon sea salt

  • ½ teaspoon ground pepper

Method:

  1. Preheat oven to 180° C. Combine together the coarsely chopped parsley and garlic. Add almond flour, egg, and meat to the bowl, and mix well with your hands. Then add salt and pepper, and mix until thoroughly combined.

  2. Drop tablespoon-sized balls of the chicken mixture onto a tray lined with baking paper. Bake meatballs for 20 to 25 minutes. Serve warm with your favourite vegetables or salad.
